Ingredients: crappie fillets
Kikkoman soy sauce(the only brand I will use)
garlic powder
black pepper
flour
corn meal
cooking oil
Directions: I didn't list specific amounts under the ingredients as it will vary according to your tastes and how much fish you have...

Take your fish fillets and place them in a zip-lock type plastic bag, add a few tablespoons of Kikkoman soy sauce(the BEST soy sauce on the market, IMHO), a sprinkle of garlic powder and black pepper, both to taste. DO NOT add salt! The soy sauce is your salt flavoring. Seal the bag and gently massage the fish around so everything is completely coated with the marinade. There is no need to wait as the fish will be nicely flavored pretty much at once.

Take your now marinated fillets and one by one dredge them in equal amounts of flour and corn meal - amounts will vary according to how much fish you have, but the ratio should be 1:1. Shake off excess breading and slip slowly into either shallow pan with hot oil, or a deep fryer. (360° or so on oil temp) Cook for 5 minutes or until golden brown, being careful to NOT overcrowd the pan/fryer so as not to bring down the oil temperature - if the oil is not hot enough, your food will be oily, not crisp and yummy! Cook fillets in batches if you have alot. Drain on paper towel and serve.
Other Notes: - goes great with home fries or hushpuppies
- works with any firm white-fleshed fish filets(walleye, bass, cod, etc.)
